You might be limited on options if you stick to the mainland (vs. jumping to some of the islands),

I just returned from 6 stops in Greece--
Corfu
Mykonos
Rhodes
Katakolon and Olympia
Athens (2nd time there)
Santorini (2nd time there)

All were wonderful and I especially liked Mykonos at least for summer months.

I would definitely fit it Olympia on your trek. It was a nice surprise and quite rural. Also, Rhodes was a pleasant surprise also.

The further north you get of course, the colder it will get.
