My favorite would either be the dumplings from sidewalk restaurants or perhaps Gong Boa Zi Ding aka Kung Pao Chicken. However you can't find the it done the same in North America as you do in China. So much better in China.

There was another dish I can't remember that was a bit like a soup but with what seemed like scrambled or fried eggs and tomatoes. One of the tastiest meals I had in Urumqi.
