When you apply for your youth mobility visa you can select from what date you want it to be valid. You have 3 months to enter the UK from this date before it expires. If you don't enter the UK during this 3 month window the visa will cancel and you can re-apply. The 2 year validity starts from the date of approval, not from your entry date into the UK.
