Well, I only spent the day there, but Montalcino was one of the most amazing places I have been to. Not sure if your time frame is etched in stone, but depending on what time of year you will be there, I highly recommend at least visiting there. We were there in October during the Festival of the Thrush and it was the highlight of a two week trip.
Over all I would suggest Tuscany/Umbria.
My husband and I are going back to Italy next month and will be in Assisi, Bologna, Perugia . . . I will be sure to let you know if any of these places are worthy of a visit (let along a long stay).
