I think September will be fine, obviously no guarantees but for the last two years it has actually been better than August and we usually recommend Apr-Jul and Sep/Oct to friends, not hopefully scorchingly hot but pleasant beach weather.
The south/north is down to personal taste they both have great beaches,.attractive historic towns (in the north Alghero, Castesardo, Santa Teresa, in the south the regional capital (and a lot larger/busier) Cagliari and all offer a full range of water and other sports.
Near Pula is Nora a Roman site and another is near Oristano (Tharros) in the west if that's your kind of thing.
In the south you can visit the islands of Sant'Antioco and San Pietro whilst in the north west you can take a short boat trip to the Island of Asinara (a national nature reserve) and from the north west get a ferry from Palau to the stunning Maddalena and for a longer day Santa Teresa. If you want a quick glimpse of how the other half live you could even visit the famous Costa Smeralda.
Hope this helps now a little plug....if you prefer a nice apartment for your trip I have a one and a two bedroom apartment next to the tourist port in Castelsardo available in September (just type "360 castelsardo" into google) 45 mins from Alghero airport and centrally placed for touring the north coast.
