It depends on your interests. Beijing and Xian is famous for its ancient construction, Guilin, Suzhou, Hangzhou and more south city are famous for its beautiful Landscape. The ancient water towns in south of Yangtze River embody the peaceful and secluded charm. Sanya is famous for its beaches and charming scenery. May be you are also interest in the Shaolin Temple which is world-famous for Chinese Kung Fu.

The standard basic itinerary for those short on time is Beijing, Xian and Shanghai. If you have more time, the most common addition is Guilin/Yangshuo. I think this is a good itinerary - it gives a mix of the ancient, the modern and natural scenery/rural life. I see quite a few itineraries these days that add on Lijiang as a fifth destination. It's well worthwhile if you can manage the sizeable detour to western Yunnan Province. Tiger Leaping Gorge is truly amazing.

Personally, I like big, frenetic cities. So I would add Guangzhou or Chongqing in there somewhere as well.
