Ideas for wheelchair traveler to see Ireland

I have a friend who has a last request to see Ireland before she passes away from Lou Gehrig's disease and I will be coordinating the trip for her. I am not familiar with Ireland or the best places to take a wheelchair bound patient so any suggestions, ideas or contacts would be greatly appreciated. She has horses and loves the country and wants to see the non-city glitzy Ireland, perhaps stay in a castle but we would need advise on all of these things.

Thanking you in advance, we have a few weeks to plan it and a few weeks to take the trip late October or early Nov at the latest if she is going to be able to go, so time is running out.
